How to prepare the Perfect Drunken Chicken Recipe?
This Chinese recipe can make the perfect appetizer before a meal. The specialty of this recipe is that it can be prepared a day in advance and thus saves time during the actual occasion. It is served as a cold appetizer.
The Drunken Chicken Recipe is another authentic Chinese recipe. A lot of alterations can be done in the original recipe according to the taste and availability of a country and as per your imagination. Changes can also be made in the alcohol beverages that are to be added in the Drunken Chicken.
The following recipe is the authentic Drunken Chicken prepared by the Chinese.
Preparation Time : 30 minutes
Cooking time : 60 minutes
Total Time : 90 minutes
1.5 kg Chicken
1 tablespoon sugar
¼ cup of salt + 2 tablespoon salt
3 spring Onions
1 small ginger
For the Wine Sauce:
3 tablespoons dry sherry or rice wine.
3 tablespoons boiled chicken stock
1 tablespoon salt
1 tablespoon sugar
1 tablespoon Soya sauce
Clean the chicken and remove the fat and skin from the chicken.
Now rub the chicken with the ¼ cup of salt on the outside part only.
Leave it for 10 minutes and then wash it off. Pat the chicken dry with some tissue papers.
Now sprinkle the remaining salt (2 tablespoon) and the sugar on the chicken, rubbing it on the outside and well as inside.
Cut the onions into large pieces.
Cut the ginger into small slices.
Now take a vessel or a wok and pour 2 liters of water in it. Bring the water to a boil.
Place half the onions and ginger slices inside the chicken and place it on a tray. Place the remaining onions and ginger on the outside of the tray.
Place this tray over the boiling water and cover it up. Let it steam cook for about an hour.
As it is being cooked, prepare the wine sauce, mixing all the above mentioned ingredients and set it aside.
After the chicken is cooked, put it aside and let it cool down.
After it is cooled, cut the chicken into small pieces as per your requirements.
Pour the wine sauce over it and let it go into the refrigerator.
Let it cool down for a minimum of 4 hours.
Your perfect Drunken Chicken Recipe is ready to be served.
